The grapes are softly pressed and only the first pressing, the free-run must, is used for the production of the base wine. After an initial aging in steel, it is time for the cuvée, expertly created by our winemakers; the wine is then bottled and undergoes secondary fermentation according to the traditional classic method. This magical wine owes its current fame to two people from Castagnole Monferrato. The parish priest, Don Giacomo Cauda, who at the end of the seventies devoted himself with great enthusiasm to the production of Ruchè, and the mayor Lidia Bianco, who worked to have it awarded the controlled designation of origin, obtained in 1987.
Of ancient and noble traditions, it is produced with Nebbiolo, Uva Rara and Vespolina grapes, grown on the morainic hills overlooking the town of the same name, north of Novara.
